Arabica Wine, Aceh

Grade 1 - Origin Aceh, Sumatera, Indonesia

Nestled within the verdant highlands of Aceh, Indonesia, our Arabica Wine coffee is a testament to the region's rich coffee heritage and innovative processing techniques. Cultivated at elevations ranging from 1,300 to 1,700 meters above sea level, the Gayo Highlands provide an ideal terroir—characterized by volcanic soil and a cool, misty climate—that imparts distinctive qualities to the coffee beans.

This specialty coffee undergoes a meticulous "wine process," a natural fermentation method that enhances its unique flavor profile. Ripe, handpicked coffee cherries are sealed in airtight containers, allowing them to ferment anaerobically for an extended period, typically around 25 days. This controlled fermentation environment encourages the development of complex, wine-like flavors and fruity aromas. Following fermentation, the cherries are sun-dried until they reach the desired moisture content, preserving the unique flavor characteristics developed during fermentation. Finally, the beans are hulled, sorted, and prepared for roasting, resulting in a coffee that mirrors the complexity and depth of fine wine, without any alcohol content.
